A healthier way to do a starch. Turmeric gives you an antioxidant and brain boost. Wonderful for a sledding day or working to rake leaves.
Coconut Rice from Ms. Elena Orsak’s Kindergarten
Serves 4-6. Takes 15-20 minutes to cook.
1 1/2 cups white rice
1/2 teaspoon turmeric
1/2 teaspoon salt
1 teaspoon vegetable oil
1 1/2 cups water
3/4 cups coconut milk
*Sometimes we use raisins as toppings, or you can cook with raisins once you’ve added the coconut milk and water. [Rachel recommends cooking raisins with the rice.]
Rinse and drain the rice. In a saucepan on medium-high heat, saute the rice, tumeric, and salt in the oil for a minute or two, stirring constantly. Add the water and coconut milk, bring to boil, cover and reduce the heat to low. Simmer until the rice is tender and the liquid absorbed, 15-20 minutes. Enjoy!
